Potatoes are so underestimated, I can actually make my own cookbook with potato dishes. It’s a shame with such a negative focus on them because they actually contain more potassium than bananas, good with magnesium, vitamin C and iron. Moreover, there are almost 0 grams of fat in them and you eat potatoes with skins, they are fiber rich as well. If they are eaten without skin, as most people do, it becomes bad with fiber! I did not know they contained the good vitamin B6, which is very important to vegetarians like me.
If consumed when they are cold, the starch is converted into resistant starch, which means fewer calories from carbohydrates. Thus they are not as bad as you could be. Therefor, I recommend several types of potato salad or jeera alu or Potato with cumin.
Ingredients
- Oil
- Onions in strips
- Tomatoes in cubes
- Ground cumin
- Grated ginger
- Turmeric
- Salt
- Fresh chilli
- Boiled potatoes
- Teaspoons dried mango powder
- Tablespoons fresh coriander
Prepration:
- Cook potatoes, keep the skin and divide them into cubes.
- Warm oil, fry the onion strips until golden
- Add the tomatoes, spices and cook the mixture for 4-5 minutes.
- Mix everything well so that tomato and spices are almost like a smooth sauce.
- Add potato cubes and simmer for 4-5 minutes, finish with dried mango powder and a freshly sprinkled fresh coriander.
Serve with a pair of lime boats both as tapas or with roti, pori and nan.
